Mango ginger is cultivated and abundantly available in south India,Mango ginger is used for preparing pickle,Chutny,salad and as a spice in various dishes.It is well known for its medicinal quality.Lets make pickle from mango ginger.It smells and taste like unripe mango.

Mnago ginger | 1 cup |
Gambooge or Malabar Tamarind ( well ground) | 1 Table Spoon |
Chilly powder | 3 Table spoon |
Garlic ( crushed ) | 2 Table spoon |
Asafoetida roasted Powder | 1 Teaspoon |
Fenugreek roasted powder | 1 Teaspoon |
Cooking oil | 100 ml |
Salt | For taste |
Method of preparation
Now mango ginger pickle is ready to serve
- Boil oil in a frying Pan
- Add chilly powder in it and mix well
- Add Gambooge or Malabar Tamarind and mix again
- Add Mango ginger and stir well ,cook for some times and set aside
- Mix with asafoetida roasted Powder,fenugreek roasted powder,close the mixture for some times
- Add vinegar if required
Now mango ginger pickle is ready to serve
